Our History

Third generation cheesemaker William O. Novak, II, spent his early years learning the unique art of cheese making from his father and grandfather. After graduating from college, Bill worked throughout the industry in natural cheese cutting, processing, procurement, production, and sales.

Bill formed Novak’s Cheese of Wisconsin, Inc. in 2006, and continues to apply his knowledge and lifelong experience to service customers and vendors alike. Bill values and supports his relationships in the cheese industry, and truly enjoys mentoring the emerging generations.

Bill is a licensed Wisconsin cheese grader, cheese maker, and a very proud Wisconsinite!
